Secret Menus at Panera? What is that about?

Just read that Panera has a secret low carb menu that you have to ask to see.  Here is the link to the menu.  Wonder why it is secret?

I have been on the lookout for low carb bread that tastes good. I had heard about Julian Bakery bread but until recently it was not available in our area. This week I found it frozen in the health food section of our local grocery store. I bought the cinnamon raisin loaf.  It is so good! I am not just saying that because it has been 4 months since I had a piece of bread, at least I don’t think I am. The protein count of 14g/slice and fiber count of 13g/slice and net carbs of 2g/slice is so impressive. 

This fits perfectly in my low carb life.  In my short experience with this bread, I am so full after eating one slice that I don’t feel hungry for hours.  Look there are even raisins in it!

This bread is only available frozen in my area, which works out great.  It will keep for a long time and is easy to grab a slice to toast and add lots of butter! This would be a great snack with low carb natural peanut  butter.

Crème Brulee from Colorado

Sarah (foodie, baker, busy mom) from Winter Park, CO sent me this and raved about it.  Perfect for a birthday celebration.  Her husband Chris (foodie, home chef, wine connoisseur) said it was the best crème brulee he ever had!  Happy Birthday Chris!

Low Carb Butter-Pecan Crème Brulee~ 3 carbs per serving

 2 C heavy cream

4 egg yolks

½ tsp vanilla

dash of salt

2 T Truvia

Heat cream over medium heat, just until bubbles start to form around side of pan. Remove from heat and let cool slightly. (Sarah barely let it cool and it was fine)

In a bowl, whisk together egg yolks, vanilla, salt and Truvia.  Gradually whisk in cream. Strain. Divide into 4 ramekins.

Bake in a water bath for 25-30 minutes at 350 degrees. (see Tips below)

Custards should be set, but still jiggly.

Chill for one hour. While chilling, prepare the butter-pecan topping.

Butter-Pecan Topping:

 1 T butter

1/4 C finely chopped pecans (even more if you want a lot of topping on each ramekin)

1 tsp Truvia

Heat just until pecans begin to color, being very careful not to burn! Divide between ramekins. Refrigerate for four hours or overnight.

Tips: Place ramekins in large roasting pan and set pan on pulled out oven rack. Then add water to reach ½ way up side of ramekins.  Sarah baked for 30 minutes and they were perfect.

No croutons, no problem..

I was just reminded of a wonderful salad addition this morning from my friend Jean (foodie, brilliant home cook, exercise partner).  These are so great in a salad and I do crave crunchy things.  Kind of salty which is perfect! Thanks Jean, see you in Italy(more on that in coming posts).

Parmesan Crisps (8-10)

1/2 C freshly grated or shaved parmesan cheese

Line baking sheet with Silpat or parchment paper

Preheat oven to 400 degrees

Pour heaping tablespoon of cheese onto prepared baking sheet about 2 inches apart.

Bake for 8-10 minutes-watch carefully

Tips: Spice it up with cayenne pepper, sesame seeds or black pepper.  Using a Silpat makes this so easy.  Just when you remove from the oven make a little basket out of the cheese by placing over inverted small bowl.

Dining out in Boston..

I am getting the hang of finding great low carb options while dining out.   While traveling this week I happened upon a place with a great menu.  The Met Bar in Boston has a “build your own burger” section of the menu with a bun-less option.  I choose the “burger in a bowl” on arugula with balsamic vinaigrette. It was served with cheddar cheese, sautéed mushrooms and a slice of tomato.   There were multiple mouth-watering options of cheeses, toppings and greens.  My meal was so delicious, bun-less is the way to go.  I definitely want to try this at home. It would be great with turkey or salmon burgers to. So many options..

Dining out in Rochester

How easy is to order low carb at restaurants?  I was pleasantly surprised recently at Chesters Kitchen & Bar in Rochester, MN.  Other than a quizzical look when we said “No thanks” to the bread basket, it was pretty smooth. I had a great meal of Grilled Salmon & Asparagus served with a lightly dressed salad and tomatoes. There were olives on the plate (see below asparagus) not sure what those were doing there, kind of random. 

My husband had the specialty of the house-Rotisserie Chicken and in place of the mashed potatoes they offered sautéed mushrooms which were delicious but unappetizing in appearance.

Pet Peeve~why do wait staff refer to diners as “Guys”?  We kept being asked, “You guys ready to order?, You guys like your food? You guys finished?” I am not a guy, my husband is, and I guess he could be considered “one of the guys” in certain settings. But at dinner as a couple, I don’t want to be one of the guys!
