Foodista | Chicken Breasts & Fresh Herbs

13 Oct

I love reading food blogs and today I found two great recipes for chicken breasts on Foodista.  The use of fresh herbs sounds delicious.

Low-Carb Chicken Breasts with Fresh Sage and Mushrooms.

Chicken Breasts with Tarragon Mushroom Cream Sauce.

Quick and easy breakfast

12 Oct

No time for frying pans and all the mess, here is a simple delicious way to prepare eggs.  Now there is no excuse for not having breakfast! Thanks Betsy for sharing this great recipe.

Coat a microwave-safe large coffee mug or custard cup with cooking spray or butter. The eggs will rise so be sure to cover the entire area.  Add two eggs, 2 T cream, salt and pepper. Beat with fork until blended. Cook on full power for 35-40 seconds and stir. Continue cooking unti eggs are set, about 40 seconds longer. (microwave times vary) Top with shredded cheese if desired.

Above is a great quick way to have breakfast, but here is my absolutely favorite way to have breakfast.  Breakfast in bed brought to me by room service. I am not sure which is better breakfast in bed or eating sausages with no guilt whatsoever? A toss up..

On the road this week in Arizona

Traveling is always fun and a great way to hear about new low carb recipes from friends I don’t get to see often. Last night Betsy shared a great quick breakfast, which I will post later today. It seems the more people I talk to, the more I hear about converts to the low carb way of life.

Yesterday I had a wonderful salad at a Spa, it was so great to see a menu with Carbs listed next to the choices. I never was much for requiring restaurants to list such things, but must admit now I am a huge fan. I had a roasted beet salad with goat cheese and walnuts on assorted greens. I felt funny taking a picture as I was with a group. But I found this picture on the internet and it looks just like the salad I had.  This salad had only 6 carbs and I was not hungry again for hours.

Just have to tell you…

I mentioned earlier today that I was making Butter Pecan Creme Brûlée for dinner guests tonight.  Ok, just so you all understand, this was amazing. So easy to do ahead of time and your guests will LOVE it!

I followed the recipe exactly as Sarah (from Winter Park, CO) sent me and it was really perfection.  I don’t say this lightly.  Make this ASAP! You will be very happy you did. It is a perfect fall dessert.  Serve with a little whipped cream and a raspberry and everyone will be happy.

Who needs a huge piece of cake? I am telling you this is better. Dig in…

Meringues-a perfect little treat

6 Oct

Fall has arrived and the chill in the air really inspired me to bake today.  I was already making Low Carb Butter-Pecan Crème Brulee, for dinner guests tonight and it left me with 4 egg whites. I hated to waste the egg whites, so meringues seemed the perfect choice.

Low Carb Chocolate Meringue Cookies (makes 50+)

(a delicate little cookie with nice chocolate taste, great with coffee)

4 egg whites

1/8 tsp cream of tartar

1/2 tsp vanilla extract

5 T + 1 tsp Splenda sugar blend (yellow bag in baking section of grocery store)

2 T unsweetened Cocoa powder

Preheat oven to 350 degrees

Combine egg whites, cream of tartar and vanilla. Beat this mixture until soft peaks form. Slowly add Splenda; beat til stiff peaks form and looks glossy.  Gently fold in cocoa powder.

Using pastry bag with star tip, twirl in small circle to form cookie on a parchment lined baking sheet. Alternatively you may drop by teaspoonfuls onto greased baking sheet. Bake for 30 minutes.

Less than 1 carb per cookie.

Tip-these may be placed close together on baking sheet as they do not spread. Move along quickly when making these as the meringue tends to deflate! My last batch looked a little flat.

Juicy burger idea from Winter Park, CO

5 Oct

Just got a yummy dinner idea from Sarah & Chris of creme brulee fame!

(80/20) organic beef

Neiman ranch bacon

egg

sautéed onion slice

slice of cheddar cheese

low carb bread

Grill burger.  While burger grilling, cook bacon, remove bacon from pan when done. In the bacon grease fry one egg.  Slice cheddar cheese and toast one slice low carb  bread.

Butter bread, top with burger, cheese, bacon, sautéed onions and top off with fried egg!

This recipe alone is a great reason to live the low carb life!

Dining out with Friends or so I thought!

Look at what they are eating! Even in my carb heydays, I don’t think I ate desserts like this. Maybe my talking about low carb eating during dinner and how great it was drove them to it?  Maybe I said too much and this is their way of shutting me up? I have to say it looked so good, I was getting weak. But somehow I just have this resolve because I feel so much better not eating like that anymore. Somedays I wonder where is Patty and who is this person I have become? Bon Appetite ladies…I promise to lighten up!
